Are you hanging in there? I'm getting by with a little help from my plant friends, especially wood betony (stachys officinalis) & california poppy (eschscholzia californica). Wood betony gives an instant sense of calm, and helps to unhook shoulders from ears. California poppy helps to mend frayed nerves, and loosens the stranglehold of worry and insomnia. I'm also making freshl emon balm-infused water for yummy lemon-scented calming & antiviral support. I'm thinking of you. Wishing you happiness and good health.

NEW HYDROLATS

Sagebrush & Pinyon Hydrolatis a resinous, warm, space & face clearing mist made with antimicrobial sagebrush and protective, healing pinyon pine resin. It holds the imprint of a vast blue sky, sunshine, and desert. 


Spearmint & Raspberry Leaf Hydrolatis a balancing & brightening mist made with cooling, hormone balancing spearmint, and brightening, antioxidant-rich raspberry leaf. I have fallen HARD for this one. I love the scent and the minty tingle. This may be my favorite hydrolat ever.


SPRING THINGS

I just made one last batch of Pastoralia Seasonal Sequence, which is a rosewater & fireweed glow-boosting 30-day sequence for springtime.

FRESH RICOTTA WITH PARSLEY-MINT SAUCE + PEAS

Recipe courtesy of chef Ana Ortiz FRESH RICOTTA INGREDIENTS

  • 2 cups Milk

  • 3/4 cups Heavy cream

  • 2 Tablespoons orange juice

  • 2 Tablespoons champagne vinegar (other vinegar would work in a pinch but not balsamic)

  • 1 Tablespoon lemon Juice

  • 2.5 grams salt

METHOD

  1. Bring the milk and cream to simmer at 200 degrees.

  2. Pour in all the acids. Continue to simmer at 200 for about 3 minutes.

  3. Turn off heat. Rest three hours.

  4. After three hours strain it. Use cheesecloth if you have it. Let it drain for about an hour.

  5. Make smoothies with the whey.

PARSLEY-MINT SAUCE INGREDIENTS

  • A bunch of mint

  • A bunch of Parsley

  • 2 spoonfuls of capers (or not)

  • 1/4 cup of soaked cashews

METHOD

  1. Blend everything thinning out the sauce with water to a thick but pourable consistency.

  2. If you didn’t add capers add salt. I use salt cured capers so if you use the other kind you may have to add a little salt too. Taste and see.

SERVING Swoosh ricotta on a plate. Spoon some mint parsley sauce on top. Top that with peas, pea tendrils, favas. Glug some good olive oil and Maldon. Add some seeds or nuts if you feel inclined. Have some micro greens? Add them too! Eat with good bread.
